German bread names answer different questions
Roggenbrot is rye bread, Weizenbrot is wheat bread, and Dinkelbrot is spelt bread. Vollkorn describes wholegrain composition; Sauerteig refers to sourdough. These labels can overlap: a loaf can be both rye and wholegrain, and made with sourdough. Start with what each part of the name tells you rather than memorising a list of unrelated loaves.
A bakery display also contains shop names, regional names and descriptions of baking style. A name is a useful clue, but it cannot tell you every ingredient, how firm today's loaf is, or whether you will enjoy its flavour.

For example, split Roggenvollkornbrot into Roggen + Vollkorn + Brot. You are reading “rye + wholegrain + bread”. When you spot a long compound, look for the final word first, then add the clues before it.
Bread types worth recognising

The BZfE rye overview explains the customary sourdough connection. Its Pumpernickel and Schwarzbrot guide distinguishes regional dark breads. Texture and flavour still vary: ask about the specific loaf instead of treating the table as a recipe.
Vollkorn, seeds and colour are not interchangeable
The BZfE explanation of wheat distinguishes wholegrain ingredients from more refined flour. Visible seeds are a topping or ingredient; they do not by themselves establish that the flour is wholegrain. A dark loaf is not automatically Vollkorn either. Look for the actual designation or ask „Ist das ein Vollkornbrot?“
Under the March 2026 German bread guidelines, Weizenbrot, Roggenbrot and Dinkelbrot use at least 90% of the named bread grain; Vollkornbrot uses at least 90% wholegrain. These percentages concern the grain ingredients, not the finished loaf's weight. They are not a universal rule for every bread or roll name.
You do not need to recite percentages at the counter. The practical distinction is simpler: “spelt”, “wholegrain” and “with sunflower seeds” answer different questions. If ingredients matter to your choice, ask for the ingredients rather than relying on colour, a rustic shape or a name such as “fitness bread”.
Brötchen, Semmel and Schrippe
Das Brötchen is a useful general word for a bread roll; the plural is also Brötchen. You may hear Semmel in parts of the south and Schrippe in Berlin. Duden records Semmel and Schrippe as regional terms. Follow the local label or point and ask; regional usage does not stop neatly at administrative borders.
Bread also has a cultural life beyond breakfast. The German Commission for UNESCO records German bread culture in Germany's nationwide inventory of intangible cultural heritage, added in 2014. This is a national inventory entry, not a listing of bread as a UNESCO World Heritage site.
Order the amount and the slicing you want
You: „Ich hätte gern ein halbes Roggenbrot, bitte.“
“I would like half a rye loaf, please.”
Baker: „Geschnitten?“
“Sliced?”
You: „Ja, bitte. Und zwei Brötchen.“
“Yes, please. And two rolls.”
This is an original practice exchange. Not every loaf is sold in halves or sliced on request, so you can first ask „Kann ich davon ein halbes Brot bekommen?“ — “Can I have half a loaf of that?” If you prefer it whole, answer „Am Stück, bitte“ — “In one piece, please.”
Eine Scheibe Brot means one slice; ein Laib Brot means one loaf. Asking for zwei Scheiben is therefore different from asking for zwei Brote. Quantity words help avoid a surprisingly large order.
Try the label-reading activity
You see “Dinkelbrot mit Sonnenblumenkernen”. Which claims can you make: it uses spelt, it is necessarily wholegrain, or it has sunflower seeds? Then ask for more information before buying.
Show answer
The name identifies spelt and sunflower seeds. It does not establish wholegrain status. Ask: „Ist das Dinkelbrot ein Vollkornbrot?“ — “Is the spelt bread wholegrain?”
Now make a complete order with the quantity you need and your slicing preference. Practise both geschnitten and am Stück so you can answer the follow-up, not only start the conversation.
Questions at the bakery
Does Schwarzbrot always mean Pumpernickel? No. Dark-bread names and recipes vary; Pumpernickel is a more specific type.
Does sourdough tell me which grain is used? No. Ask separately about the grain and other ingredients.
